Lactose free cheesecake

As someone who is lactose intolerant, I find it hard to get cakes and desserts that don’t contain milk. My favourite dessert is cheesecake so I decided to make one without the lactose in it and using some of the Lactofree products as I have found them the closest tasting to milk.

The ingredients that you will need to make the cheesecake are:
83g Digestive biscuits – the supermarket value ones quite often don’t contain milk, check the packet.
33g Dairy free spread.
200g Lactofree soft cheese
100ml Lactofree cream
1tsp Vanilla
33g Icing sugar.
1 Leaf of gelatin.

You can easily change the lactose free items to normal ones and it will work exactly the same.

 
First you need melt the butter and then blend the biscuits either in a blender or by hand like I did.

Then add the biscuits to the melted butter and press into a tin or dish like I used.

Then you need to whisk the soft cheese, add the vanilla and icing sugar. 
Whisk the cream until it forms peaks. 
Fold the cream into the mixture.
If you want to add the gelatin, follow the packet on how to dissolve the gelatin and you could add it to the cream before adding to the rest of the mixture.

Then add the mixture to the top of the biscuits base and put in the fridge to set. 

I added strawberries to the top of the cheesecake but you could add other fruit like oranges or kiwi or you could add grated chocolate, yum!

When making this cheesecake I didn’t add the gelatine and it came out more soft consistency but adding the gelatine will firm up the cheesecake.

I would like to try and make some more desserts that don’t contain lactose and will let you know how I get on if I do make some.
